KING RANCH CHICKEN

Ingredients

  • 1 Large Chicken
  • 1 Large Onion (Quartered)
  • 1 Small Piece Bell Pepper (Whole)
  • 2 Large Carrots, (Peeled & Halved)
  • Garlic Powder
  • Salt
  • Pepper
  • 1 Can Cream Of Mushroom Soup
  • 1 Can Cream Of Chicken Soup
  • 1 Can Ro*Tel Tomatoes
  • 1 Soup Can Chicken Stock
  • 1 Dozen Tortillas
  • 1 Large Onion, Chopped
  • 2 Cups Cheddar Cheese, Grated

Preparation

Step 1

Poach chicken in large stock pot with onion, bell pepper, carrots and a generous amount of garlic powder, salt and pepper. Simmer over medium heat until chicken is tender. Remove chicken. Cool and de-bone. Cut chicken into bite-size pieces.

In small saucepan with small amount of cooking oil sauté onion until tender. In large bowl combine soups, Ro*Tel tomatoes, chicken stock, chicken, and onion.

Layer chicken mixture with tortillas that have been cut in half in a 9x13 pan.

Cover and bake at 350F for 1 hour. Top with cheese, remove cover and bake until gold and bubbly.
