Whole Roasted Lemon Chicken

Ingredients

  • 1 3-4 lb chicken (rinsed with giblets removed)
  • Olive oil
  • Salt & pepper
  • 2 lemons, halved

Preparation

Step 1

Rub chicken with olive oil.
Sprinkle salt & pepper inside cavity.
Squeeze the juice of the lemons over the chicken then place the lemon halves in the cavity.
Sprinkle salt on the outside of the chicken and place in roasting pan.

Roast uncovered at 425F for 30 minutes; then at 375F for 55 nminutes.
