Slow Grilled Leg of Lamb

Ingredients
- 1 5-6 lb leg of lamb, bone in
- 3 garlic cloves
- 3 T. Dijon mustard
- 2 T. olive oil
- Juice of one large lemon
- 1 T. rosemary
- 1 tsp. kosher salt
- Ground black pepper

Preparation
Step 1
1.Place lamb in a large baking dish.
2.Put remaining ingredients in a blender and blend until a paste forms.
3.Spread paste over lamb. Cover and let marinade for 2-8 hours.
4.Preheat the grill with all the burners on high. After 15 minutes turn off center burners and reduce outer burners to medium. Grill the lamb with the grill covered for 1-1 ½ hours.
5.The lamb is done when the inner temp is 140.
6.Let rest at room temp for 15 minutes before serving.
