Lemon rice

  • 1/2 cup chopped onion
  • 2 tsp minced garlic
  • 1 tbsp vegetable oil
  • 2 cups water
  • 1 cup long grained rice, uncooked
  • 1 tsp grated lemon zest
  • 1 tbsp + 1 tsp fresh lemon juice
  • 2 cubes chicken bouillon
  • 1/4 cup fresh chopped parsley


Servings 4


Step 1

Cook onion and garlic in hot oil in medium saucepan over medium-high heat stirring constantly for 3 mins or until tender. Add water, rice, lemon zest, lemon juice, and bouillon cubes; bring to boil. Cover and reduce heat and simmer 20-25 mins. or until rice is tender and liquid is absorbed. Stir parsley into rice mixture.
