There are few candies that are as good as Divinity when it's well made... Most commercial versions pale compared to this fluffy lovely candy that melts in the mouth...

Ingredients

  • 2 - 2 1/2 c sugar
  • 1/2 c water
  • 1/2 c Karo (light corn syrup)
  • 1 t vanilla
  • 2 egg whites
  • 1/2-1 c nutmeats (walnuts or pecans)
  • 1/4 t salt

Preparation

Step 1

Cook Sugar, karo, water until it forms a ball in cold water 260 degrees (hard ball stage). Stir till sugar is dissolved then cook without stirring until it reaches temperature.
While syrup is cooking, beat egg whites & salt till very stiff
When syrup is cooked, pour it slowly in a thin stream over egg whites while beating. Add vanilla and continue to beat until stiff and looses the “glossy” appearance and is stiff. This takes a long time, 15-20 minutes with a kitchenaid mixer.
Fold in nutmeats. Pour onto buttered platter or drop by spoonfuls onto wax paper (use wax paper to help spread out in cookie sheet as you have to work fairly quickly). Cool and cut into squares. Store in an airtight container… Do not make on humid or rainy days, it will not set properly.
