Chicken in a Crock pot, Italian

Ingredients

  • 4 chicken breasts, roughly cut into smaller pieces and seasoned with salt & pepper - also sprinkle about 1/4 tsp of red pepper over the chicken pieces
  • 2 cups Spaghetti sauce
  • 3-4 cups chopped veggies such as onions, peppers, zucchini, mushrooms, yellow squash
  • 1 can of petite diced tomatoes - drain 1/2 of the liquid
  • 1 tsp minced garlic
  • 1/2 can Italian style tomato paste (mix with the drained diced tomatoes to thin it out and add in the garlic)
  • 2 tsp Italian Seasoning herbs
  • 1/2 cup red wine and some parmesan cheese to finish it. (optional

Preparation

Step 1

Place 1/2 of the chicken on the bottom of the crock pot, add 1/2 of the the veggies/tomato mixture/spaghetti sauce and then repeat the layers.

Place crock pot on low and cook at least 6 hours.

When you get home, stir to blend the ingredients, add in the red wine (if you choose) and top with some parmesan cheese when you serve.
