Chicken, Layered Mexican (WW)

Ingredients

  • Olive Oil Cooking Spray
  • 2 lbs of Chicken
  • 30 oz. Rinsed/Drained Black Beans
  • 3 C Fat Free Sour Cream’
  • 2 C Shredded Fat Free Jack or Mexican Cheese
  • 8 oz. Chopped Chiles
  • 2 tsp Ground Cumin
  • 1/2 tsp Black Pepper
  • 12 Medium Corn Tortillas Cut in 2-inch strips
  • 1 C Salsa

Preparation

Step 1

Preheat oven to 350 degrees.

Coat a 9 X 13 pan with Pam. Cook chicken and cut into one-inch pieces. Place chicken in a large bowl and add beans, sour cream, 1 C cheese, chiles, cumin, pepper. Mix well.

Layer: ½ tortillas (and overlap), ½ chicken mixture, ½ cheese and repeat.

Bake for 30 minutes. Let set 5 minutes. Serve with salsa on the side.
