Garlicky Rice

Ingredients

  • 2 tbsp olive oil
  • 2 cups brown rice, uncooked
  • 3 cloves garlic, minced
  • 2 (13 3/4-ounce) can vegetable broth
  • 4 tbsp green onions, thinly sliced
  • 2 tsp lemon zest

Preparation

Step 1

Heat oil in large skillet over medium-high heat. Add rice and saute 1 minute; add garlic and saute 2 minutes. Stir in broth and 1 1/2 cups water and bring to a boil. Cover, reduce heat, and cook over medium-low heat 45 minutes or until liquid is absorbed. Spoon into a bowl, fluff with a fork, top with green onions and lemon zest.
