Ingredients
- 1/4 cup Butter
- 1/2 cup Granulated Sugar
- 1 Egg Yolk
- 1/2 cup Chopped Pecans
- 3/4 cup Crushed & Drained Fresh Strawberries
- 66 Vanilla Wafers Cookies
- 1 cup Heavy Cream
- 1/4 cup Confectioners Sugar
- Flaked Sweetened Coconut
Preparation
Step 1
Slice strawberries into thin slices. On flat surface, mash strawberries with fork. Set aside and drain any juice through mesh strainer. Cream butter and sugar together. Add egg yolk and mix well. Add drained strawberries and nuts. Spread between vanilla wafers, three high with rounded sides at top and bottom. Leave top and bottom cookies plain. Refrigerate 24 hours.
Next day, pulse coconut in food processor to fine flakes and place in rimmed dish for rolling snowballs. Whip cream and add 1/4 cup confectioners sugar, mixing well. Cover wafer stacks with whipped cream and roll into ball, and roll in coconut. Refrigerate again until ready to use.
Helpful Tips:
You can also use cream cheese and strawberries as substitute for sugar, butter and egg.
