Chicken & Pesto Pasta Salad

  • 1 cooked, cooled rotissieri chicken
  • 1 lb penne pasta
  • 1/2 cup pesto
  • 3 tbs fresh lemon juice
  • 2 tbs olive oil
  • 1 tbs minced lemon zest
  • 1 tbs minced garlic
  • salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pine nuts, toasted



Step 1

Remove meat from chicken and shred; set aside.

Cook penne in a large pot of boiling salted water according to pkg directions. Transfer to a bowl of ice water; drain.

Whisk together pesto, lemon juice, oil, zest, and garlic in a bowl; season with salt and pepper.

Combine shredded chicken, penne, Parmesan and pine nuts in a large bowl. Toss with pesto mixture and season with salt and pepper to taste. Serve immediately.
