Buttermilk Pralines

Ingredients

  • 2 cups granulated sugar
  • 1 cup buttermilk
  • 1 cup (2 sticks) butter
  • 2 tablespoons light corn syrup
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 cup coarsely chopped pecans or roasted cashews

Preparation

Step 1

1. Combine granulated sugar, buttermilk, butter, corn syrup and baking soda in a large buttered saucepan. Bring to a boil over medium heat, stirring continually. Cook, stirring continually, until sugar is dissolved.


2. Continue to cook, stirring continually, until the mixture reaches 236ºF on a candy thermometer, soft-ball stage.


3. Remove from heat. Stir in the vanilla and salt.


4. Beat with an electric mixer until mixture is thickened and loses its gloss. Stir in pecans. Drop by teaspoonfuls onto waxed paper. Let stand to cool completely.
