- 2 Cups Split Peas
- 6 Cups Water
- 4 Cups Vegetable Broth
- 1/3 Cup Minced Onion
- 1 Large Garlic clove
- 2 Tsp Lemon Juice
- 1 Tsp Salt
- 1 Tsp Sugar
- 1/4 Tsp Dried Parsley
- 1/4 Tsp White Pepper
- 1/2 Cup Barley
- 6 Cups Water
- 2 Medium Carrots
- 1 Stalk of Celery

Rinse and drain peas. Add to a large pot with 6 cups of water. Bring to a boil, then reduce heat to a simmer. Add broth, onion, garlic, lemon, salt, sugar, parsley, and pepper. Cook for 1 1/4 hours or until peas are soft.

While peas are cooking put 6 cups of water in another pot with barley. Bring to a boil then reduce heat to a simmer and cook barley for 1 1/4 hours or until barley is soft and most of the water has been absorbed. Drain barley.

Add barley to peas

Add carrots and celery and cook for another 20 minutes or until carrots are soft.

Turn off heat and let stand 10 minutes before serving.
