Cheesy Refried Beans

Ingredients
- 1 strip thick-sliced bacon
- 1 cup onion, diced
- 1 Tbsp vegetable oil
- 3 Tbsp jalapeno, seeded and minced
- 1 Tbsp garlic, minced
- 1 Tbsp fresh lime juice
- 2 cans pinto beans, drained, rinsed, divided (15 oz each)
- Salt to taste
- 3/4 cup queso blanco or Monteray Jack, shredded
Preparation
Step 1
Preheat oven to 450.
Saute bacon in a skiller over medium high heat until crisp, 6 minutes. Add onion and oil; cook until carmelized, 9 minutes. Stir in jalapeno and garlic, cook 1 minute, then finish with lime juice.
Puree onion mixture with all but 1 cup of beans and 1/4 cup water in a food processor until smooth. Season with salt, then transfer to a bowl and fold in reserved whole beans.
Spread mixture in a 2-qt baking dish, sprinkle with cheese, and bake until melted and golden, 15 minutes.
