Mushroom pie

  • one frozen pie crust or refrigerated pie crust
  • 2 T butter
  • 1 pd sliced mushrooms
  • 1 large clove garlic minced
  • salt and pepper
  • 1/2 cream
  • 1/3 c milk
  • 1/3 c sour cream
  • 2 eggs lightly beaten
  • a dash of nutmeg
  • 1 T chopped parsley
  • 1 c grated monterrey jack cheese



Step 1

Preheat oven to 425
line inside of pie shell with heavy tin foil pressing it against the side
bake 8 mins
remove foil, poke the bottom of crust with tines of fork to create vents
return crust to oven and bake an additional 4 mins
remove and let cool
In a large skillet melt butter on med heat
add mushrooms to coat with butter
increase heat stirring constantly until moisture has released
lower heat-add minced garlic stir for 3 seconds and remove from heat
beat together the eggs,sour cream, milk and cream
add freshly ground pepper, a pinch of salt and nutmeg
stir in grated cheese and chopped parsley
spread the sauteed mushrooms along the bottom of the pie crust
pour the cheese and cream mixture of the top
bake 30-35 mins till nicely browned on top
remove and let cool before serving
