Harissa

You will need 10-12 dried red chili peppers.....You can use Cayenne, Chile de Arbol or Ancho Chiles

Ingredients

  • 10-12 dried red chili peppers
  • 3 clove garlic, minced
  • 1/2 tsp salt
  • 1 tsp ground coriander
  • 2 tbsp olive oil
  • 1 tsp ground caraway seed
  • 1/2 tsp cumin

Preparation

Step 1

Soak chiles in hot water for 30 minutes. Drain, remove stems and seeds.

In a food processor, combine chili peppers, garlic, salt and olive oil. Blend. Add remaining spices and blend to form smooth paste.

Store in an air tight container. Drizzle olive oil on top to keep fresh. Good for 1 month.
