Ingredients
- 1/3 cup light oil
- 1/2 cup cooked green peas
- 2 lg eggs
- 1/3 cup frozen corn
- 1 cup scallions coarsely chopped
- 6 oz chicken breast chopped
- 3 cup rice cold cooked
- 6 oz cooked ham chopped
- 1/2 cup green pepper, chopped
- 1/4 cup soy sauce
- 1/2 cup mushrooms, chopped
- 2 lg garlic cloves, minced
- 1/2 cup broccoli sm flowerets
- 1/2 tsp sugar
- 1/2 cup celery, chopped
- Salt and pepper to taste

Step 1
Heat 1-Tbsp oil in a small skillet. Break eggs into pan and cook, stirring until they are set. Salt and set aside while moist. Do not overcook. In another skillet heat oil and add scallions, stir until they are hot. Add rice and stir rapidly so that the rice will not stick to the skillet. Add ham, chicken, green pepper, mushrooms, broccoli, celery, garlic and sugar. With a spatula toss rice mixture until vegetables are soft. Add more oil if rice is dry. While stirring, add soy sauce, peas, corn and heat briefly. Add salt, pepper and soy sauce to taste. Break up the eggs into small pieces; stir into rice. Serve when ready.
