Ingredients

  • 2 eggs
  • 1/2 C evaporated milk
  • 1 C plain yogurt
  • 1/2 C grated swiss cheese
  • 1/3 C crumbled feta cheese
  • 1/3 C fresh parsley
  • 1/4 C fresh basil or 1 t dried basil
  • 1 t oregano
  • 1 clove garlic, chopped
  • 9 oz. fresh angel hair pasta (deli)
  • 1 lb. peeled shrimp
  • 1/4 C salsa
  • 2-3 T butter
  • 1/4 C grated Monterey Jack cheese
  • 1/4 C grated Parmesan cheese

Preparation

Step 1

Grease 12 x 8 dish with 1 T butter. Spread 1/2 of uncooked fresh angel hair pasta in dish. Layer 1/2 of shrimp over. Spoon 1/4 C salsa over. Layer remaining pasta. Mixfirst 9 ingredients and spread over pasta. Top with remaining shrimp. Dot with 2-3 T butter. Sprinkle with grated Monterey Jack and Parmesan. Bake at 350 for 30-40 minutes. Let stand for 10 minutes before serving.
