Ingredients

  • 1/2 cup extra virgin olive oil
  • 2 small onion or shallot, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 celery stalks, finely chopped
  • 2 carrots, finely chopped
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 3 32oz cans crushed san marzano tomatoes
  • 2 dried bay leaves
  • 6-10 leaves fresh basil
  • 1 tsp dried oregano

Preparation

Step 1

In a large casserole pot, heat olive oil over medium flame. Add onions and garlic and sautee until transluscent, about 10 minutes. Add celery, carrots, salt, pepper and oregano. Sautee until all veggies are soft, about 10 minutes. Add tomatoes, basil and bay leaves. Simmer, uncovered on Low heat until sauce thickens, about 1 hour. Remove and discard bay leaves. Season sauce with more salt and pepper, to taste. Re-warm sauce over Medium heat before use.
