Potato Pancakes

Ingredients

  • 1/2 cup all-purpose flour
  • 2 eggs, lightly beaten
  • 1 Tbs chopped fresh dill
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 lb all purpose potatoes, peeled
  • 1 carrot, grated
  • 1 onion, grated
  • 4 Tbs butter or margarine
  • Applesauce, optional

Preparation

Step 1

Combine flour, eggs, fresh dill, salt and pepper. Grate potatoes, do not rinse with water. Stir potatoes, carrots and onion into egg mixture. In skillet melt 2 Tbs butter over medium heat. Drop batter by 1/4 cupfuls unto skillet. Cook until golden brown, about 4 minutes per side. Repeat with remaining butter and pancake batter. serve hot with applesauce, if desired.
