Ingredients

  • 3 quarts water
  • 1 lb ginger root, washed,unpeeled and grated
  • 1/2 cup lime juice
  • 1-11/2 lbs light brown sugar

Step 1

Boil water, and add grated ginger, steep overnight.Strain into bottle, pressing ginger out, Add lime juice and sugar.Stir vigorously. Cover and store 24 hours at room temp.
Decant to another bottle with a screw top lid and store for 3-5 days in refridgerator.
