Ingredients
- 1 TABLESPOON VEG OIL
- 1/2 CUP CORN KERNELS
- 1/2 RED BELL PEPPER. THINLY SLICED
- 1/2 GREEN BELL PEPPER THINLY SLICED
- 1 SMALL YELLOW SQUASH ( CUT INTO HALF MOON SLICES)
- 4 CUPS CHICKEN STOCK
- 1 1/4 CUPS COOKED CHICKEN BREAST PIECES
- SALT AND PEPPER TO TASTE
- 2-3 TEASPOONS FRESH LIME JUICE
- CHOPPED CILANTRO
- CORN TORTILLA STRIPS FRIED IN OIL AS GARNISH
Preparation
Step 1
HEAT THE VEG OIL IN A 3 QT SAUCEPAN OVER MEDIUM HIGH HEAT. SAUTE THE CORN,BELL PEPPERS,SQUASH AND ZUCCHINI ABOUT 2 MINUTES UNTIL SLIGHTLY BROWN BUT STILL CRUCHY. POUR IN STOCK AND BRING TO A BOIL.
ADD CHICKEN, SALT AND PEPPER TO TASTE AND SIMMER 1 MINUTE.
TURN OFF HEAT, ADD LIME JUICEAND A GENEROUS PINCH OF CILANTRO. POUR INTO BIG BOWLS AND TOP WITH FRIED TORTILLA STRIPS. (RECIPE CAN EASILY BE DOUBLED)
