Enoki And Watercress Soup

- 5 cups chicken broth
- 1 1/2 cups chopped trimmed watercress
- 1 bag enoki mushrooms - (3.5 to 4 oz)
Wash and trim lower portion of enoki. Simmer chicken broth, watercress and enoki until watercress is dark green. Serve at once.
