Chocolate Banana Brownie Overload
Clean dessert pizza!

Ingredients
- Olive oil cooking spray
- 1 t cornmeal (not coarse grind)
- 1 1-lb pkg store-bought whole-wheat pizza dough
- 4 medium firm ripe bananas, sliced 1/4-inch thick
- 2 c fresh raspberries
- 2 T unsalted walnut pieces, toasted
- BROWNIE TOPPING
- 2 medium ripe bananas, mashed
- 1/4 c unsalted almond butter
- 1/4 c unsweetened cocoa powder
- 2 T maple sugar flakes, finely ground
- 2 T whole-wheat flour
- 1 t baking powder
- 1 t pure vanilla extract
- 1 t cinnamon, ground
- 1/8 t cayenne pepper
- Pinch sea salt
- 1/2 c melted dark chocolate (70% cocoa or greater)
- 4 egg whites, divided
- CREAM CHEESE ICING
- 1/2 c low-fat plain cream cheese
- 1 t pure vanilla extract
- 1 T maple sugar flakes, finely ground
Preparation
Step 1
1. Preheat oven to 475.
2. Lightly mist pizza pan with cooking spray and dust with cornmeal. Roll out dough into a circle about 12-14 inches in diameter.
3. Prepare Brownie Topping. Using an electric mixer or food processor, combine 2 bananas, almond butter, cocoa powder, maple sugar flakes, flour, baking powder, vanilla, cinnamon, cayenne and salt until smooth. Add chocolate and mix until well-combined. Pour mixture into a medium mixing bowl.
4. In a separate bowl, whisk 3 egg whites until foamy. Using a spatula, gently fold egg whites into banana mixture. Mixture will be runny.
5. Brush remaining 1 egg white around 1-inch edge of dough. Using your fingertips, gently roll 1/2-inch edge of dough in toward the center and pinch (similar to making a pie crust). Continue this motion around the entire edge of crust to form a rolled edge about 1/2-in tall (this will hold in the Brownie Topping).
6. Pour Brownie Topping mixture onto center of pizza dough and spread evenly to rolled edge. Place pizza into oven and bake 12-14 mins or until crust is golden brown and a toothpick inserted into center of brownie filling comes out clean.
7. Prepare Cream Cheese Icing. In a small bowl, mix together cream cheese, vanilla and maple sugar flakes until sugar flakes dissolve completely. Transfer mixture to a small disposable plastic bag, gently squeezing icing into the bottom.
8. Remove pizza from oven and top evenly with 4 banana slices, raspberries and walnuts. With scissors, cut a corner off the plastic bag with Cream Cheese icing to make a small opening. Sliding your hands down the bag, squeeze icing through the opening and onto pizza in a zigzag pattern. Slice pizza into 16 pieces and serve immediately.
