Ingredients

  • 1 lb boneless, skinless chicken breast
  • 3 tsp evoo
  • salt and pepper
  • 3 T ff plain yogurt
  • 3 T Dijon mustard
  • 1/3 cup chopped celery
  • 1/3 cup seedless grapes cut in half
  • 1/3 cup chopped red apple

Preparation

Step 1

Preheat grill to high.

Rub chicken all over with 1 tsp olive oil and season with s/p. Place on grill and cook 3-5 minutes. Allow to cool and cut into bite sized pieces.

In large mixing bowl, whisk together the remaining 2 tsp evoo, yogurt and mustard. Add the chicken, celery, grapes and apple. Gently toss and season with s/p.
