Ingredients
- 5 Tbs Butter
- 1/2 C Sugar
- 1/2 C Packed Light Brown Sugar
- 1 Large Egg
- 2 Egg Whites
- 1 Tsp Vanilla Extract
- 1 1/2 C Mashed, very Ripe Bananas
- 1 3/4 C All-Purpose Flour
- 1 Tsp Baking Soda
- 1/2 Tsp Salt
- 1/4 Tsp Baking Powder
- 1/2 C Heavy Cream
- 1/3 C Walnuts, Chopped
Preparation
Step 1
Preheat oven to 350 degrees.
Spray bottom of a 9 X 5 X 3 inch loaf pan. Beat butter in large bowl with electric mixer set on medium until light and fluffy. Add sugars; beat well. Add egg, whites, and vanilla; beat until well-blended. Add mashed bananas and beat on high for 30 seconds.
Combine flour, baking soda, salt, and baking powder in a medium bowl. Add flour mixture to butter mixture alternately with cream, ending in flour mixture. Add walnuts to batter and mix well.
Bake about 1 hour and 15 minutes, until toothpick comes out clean. Cool on wire rack. Remove from pan and cool completely on wire rack.
