Spiced Carrot-Zucchini Bread

Ingredients

  • 2 1/4 cups flour
  • 1 cup sugar
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground cloves
  • 3/4 cup finely chopped carrots
  • 3/4 cup finely chopped zucchini
  • 2/3 cup vegetable oil
  • 1/2 cup raisins (optional)
  • 1/2 cup milk
  • 2 eggs, lightly beaten

Preparation

Step 1

Preheat oven to 350F. Spray bottom of loaf pan with cooking spray. In a large bowl, combine flour, sugar, cinnamon, baking soda, baking powder, salt and cloves. Add remaining ingredients; stir just until dry ingredients are moistened.
Spoon batter into pan. Bake 65-70 minutes or until toothpick comes out clean. Remove from oven; cool pan 5 minutes. Loosen sides of loaf from pan; remove loaf to cooling rack. Cool completely.
