Pimiento Cheese Sandwiches

Ingredients

  • 2 cups (8 ounces) finely shredded sharp Cheddar cheese
  • 1 (7-ounce) jar diced pimientos, drained
  • 1/2 cup mayonnaise
  • 16 slices white bread

Preparation

Step 1

In a medium-sized bowl, combine all ingredients except bread; mix well.

Spread mixture evenly over 8 bread slices.

Top with remaining 8 bread slices then cut into squares or triangles and serve.

Notes:
If you'd like, serve these hot. Just bake on a rimmed baking sheet in a 350 degrees F. oven for 5 to 8 minutes, or until toasted and the cheese is melted, then cut into squares or triangles.
