Using a good mop while smoking your brisket will help tenderize the meat as well as keep it moist throughout the smoking process. This mop works great if you intend to turn the entire brisket into chopped/shredded/pulled beef sandwiches.

Ingredients

  • • 2 cups beef stock
  • • 1 cup beer
  • • 2/3 cup Worcestershire sauce
  • • 1/3 cup vegetable oil
  • • 1 1/2 teaspoon salt
  • • 1 1/2 teaspoon paprika
  • • 1 1/2 teaspoon dry mustard
  • • 1 1/2 teaspoon black pepper
  • • 1 1/2 teaspoon cayenne
  • • 1 teaspoon Tabasco
  • • 1 teaspoon garlic powder

Preparation

Step 1

Combine all ingredients. Mix Well. Can be stored in the refrigerator for several weeks.

Mop your brisket at least once every two hours during the smoking process.
