Ingredients
- 1/2 to 1 lb salt pork, cut in small cubes
- 3 lb linguica, sliced thin
- 3 4 4 large onions, sliced
- 1 lb dry red beans
- 8-10 large potatoes, peeled and cubed
- 2 bunches fresh kale, washed and cut up small
- to and pepper, to taste

Preparation
Step 1
Soak red beans overnight; drain, rinse and sort. In a large kettle, fry out salt pork until crispy, (Don't discard pork), Add linguica, onions, and red beans, and then quickly add enough water to make kettle 3/4 full. Cover and simmer, until red beans are tender, a few hours, at least, adding water as necessary. When beans are tender, add potatoes, kale and salt and pepper, and simmer until vegetables are tender.
Note: The slow simmering adds an enormous amount of flavor to this soup, and thicken it as well.
