My Rice Cooker Mexican Rice

Although this rice is easy enough to make on the stove top, you could make it even easier by cooking it in a rice maker if you have one. That way you are free to work on the rest of the meal without being distracted by checking on the rice. What I like most about Mexican rice is that cooking it in the chicken stock and salsa makes it nice and creamy and full of flavor.
Ingredients
- TIP: In place of the taco seasoning, you can add:
- 1 cup uncooked regular rice (Use my rice cooking measuring cup.)
- 2 cups chicken broth
- 1/2 cup salsa
- 1 teaspoon garlic salt
- 1 teaspoon taco seasoning
- 1 tablespoon butter
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
Preparation
Step 1
1. Rinse rice well under running water for 3 or 4 minutes. Place in rice cooker.
2. Add remaining ingredients and stir well. Start rice cooker. My rice cooker takes about 55 minutes. When rice cooker is done, open top and stir the rice well.

MY NOTES:
This works well with my Zojorushi rice cooker. I used the exact proportions below and the rice was done at 55 minutes. I was worried that there was too much liquid but it was fine.
