DOUBLE CRUNCHER COOKIES

Ingredients

  • 1 c. flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. shortening
  • 1/2 c. granulated sugar
  • 1/2 c. brown sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 c. crushed cornflakes
  • 1 c. rolled oats
  • 1/2 c. coconuts
  • 6 oz. chocolate chips
  • 1/2 c. icing sugar
  • 1 tbsp. water
  • 1/3 c. soft cream cheese

Preparation

Step 1

Stir the flour, soda and salt together and set aside. Combine shortening and the sugars until creamy. Blend in the egg and vanilla and then stir in the flour mixtures. Add cornflakes, oats and coconut. Remove 1/3 dough. Shape the remaining dough into balls using a level tsp. Place on greased cookie sheet and flatten. Bake at 350 F for 8 - 10 minutes. Shape remaining dough into balls using 1/2 tsp. flatten and bake 8 minutes. Cool.

Mix up chocolate filling
Melt over hot water, chocolate chips, icing sugar and water. Blend in soft cream cheese. Beat until smooth. Cool. Spread filling onto the large cookie and top with the small cookie.
