This hearty side of buttery mashed potatoes flvoured with chopped spring onions is one of Northern Ireland's most popular dishes...and it's not hard to see why.

Ingredients

  • 1 kg Potatoes
  • 50 ml Milk
  • 25 g Butter
  • 1 bunch Green Onions (finely chopped)

Preparation

Step 1

Place the potatoes in a large pan of cold water. Bring to a bil, then simmer for 12 -15 minutes until tender.

Drain the optatoes well and return to the por for 30 seconds to dry out, then mash with the milk & butter until smooth and fluffy.

Stir the green onions through the mash, season with freshly ground black pepper and serve immediately.
