Ingredients

  • 4 c quinoa
  • 2 c finely diced cucumbers (skin on, seeded)
  • 1 c each, diced red bell, green bell, yellow bell, carrot, red onion & tomato
  • 3 c rough chopped parsley
  • 2 1/2 T lemon juice
  • 1 1/2 T apple cider vinegar
  • 2 t each: salt & pepper

Preparation

Step 1

Mix all ingredients thoroughly; taste for lemon, salt & vinegar to be present but not overpowering

For quinoa:
2 c water
1 cup quinoa

Bring water to boil. Add quinoa, cover; cook over medium low heat for 12 minutes
Fluff & chill
