Garden Tomato Sauce over Pasta

  • 1 small onion, diced
  • 1 TBSP olive oil
  • 1 garlic clove, minced
  • 4 medium-size fresh tomatoes, cored and chopped
  • 1/4 cup dry red wine
  • 1 tsp dried Italian seasoning
  • Hot cooked pasta

Step 1

Saute onion in olive oil over medium-high heat 3 minutes or til tender. Add garlic; saute 1 minute. Add tomatoes, kosher salt and black pepper to taste. Cook, stirring often, 2 to 3 minutes or til tomatoes start to release their juices. Add wine, and cook, stirring occasionally, 5 to 8 minutes or til almost all liquid is evaporated. Remove from heat and stir in seasoning.
Serve over hot cooked pasta.
Store sauce in airtight container in fridge up to 1 week, or freeze up to 1 month.
