Garlic-Goat Cheese Mashed Potatoes

Ingredients
- 1 1/2 lb russet potatoes, peeled and cubed
- 1 clove garlic, minced
- 2 Tbsp unsalted butter, softened
- 1/4 cup goat cheese
- 2 Tbsp chopped fresh chives
- Salt to taste
Preparation
Step 1
Boil potatoes and garlic in a pot of salted water until tender, 10-12 minutes.
Drain potatoes and return to the pot to dry briefly over medium heat. Crush potatoes with a masher. Stir in butter and cheese until melted. Add chives and season with salt.
