Cappuccino Bars

Homemade bars are in the oven in minutes when you get a jump-start using Bisquick mix.

Ingredients

  • Bars:
  • 1 1/2 cups Original Bisquick mix
  • 1 cup packed brown sugar
  • 1/2 cup raisins
  • 1/4 cup chopped nuts
  • 1/2 cup water
  • 2 tablespoons instant coffee granules or crystals
  • 2 tablespoons shortening
  • 1/2 teaspoon ground cinnamon
  • 1 egg
  • Glaze:
  • 1 cup powdered sugar
  • 1/4 teaspoon vanilla
  • 1-2 tablespoons cold brewed coffee or milk

Preparation

Step 1

Heat oven to 350 degrees. Grease bottom and sides of 13x9-inch pan with shortening or cooking spray; lightly flour.

In medium bowl, stir bar ingredients with spoon until well blended. Spread in pan.

Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.

In small bowl, mix glaze ingredients until smooth and thin enough to drizzle. Drizzle glaze over warm bars. For bars, cut into 8 rows by 4 rows. Serve warm or cool.

Made them last night. Very easy and quick to make and the taste was wonderful, especially the icing. Only draw back that I see is that it was very crumbly and when cut they fell apart, even baking the full 25 minutes. Everyone loved them!

The easiest substitute for shortening is butter. It won't matter for bar cookies, but you may want to chill the dough for drop cookies to keep them from spreading too much.

I really want to try these! Anyone know how to substitute for the shortening? I know it's not much, but I don't even have shortening in my house!

Made this a while back. Got rave reviews. Really delicious for coffee lovers. Could taste the coffee mixed with the cinnamon and raisins and nuts, plus glaze... What a great combo.. Will make again. Oh, I forgot, very pretty too.

I substituted white chocolate chips for the raisins. They were rich and delicious.

These aren't bad. They couldn't be easier to make!
