Roasted Shallot Yogurt Dip

Ingredients

  • 6 shallots
  • 3 garlic cloves
  • 2 teaspoons olive oil
  • 1 cup plain lowfat Greek yogurt
  • 3 Tbsp chopped chives

Preparation

Step 1

Toss unpeeled shallots and unpeeled garlic cloves in olive oil on baking sheet. Bake at 350 until soft, 20-30 minutes. Cool, then peel. Finely chop and mix with 1 cup yogurt, chopped chives and salt to taste. Top with more chives.
