Ingredients

    peaches, about 3 lbs.

  • 1

    C plus 1 Tbl. sugar

  • 1

    Tbl. lemon juice

  • 1/4

    tsp. nutmeg

  • 1-1/4

    C + 3 Tbl. flour

  • 3/4

    tsp. baking powder

  • 1/4

    tsp. baking soda

  • 1/4

    tsp. salt

  • 1/3

    C vegetable shortening

  • 2/3

    C skim buttermilk

Directions

Heat oven to 375. Spray a 2 qt. baking dish with PAM. Peel peaches and slice. Toss peaches with 1 C of the sugar, lemon juice, nutmeg and 3 Tbl. flour. Put in baking dish. Combine remaining 1-1/4 C flour, 1 Tbl. sugar, baking powder, soda and salt. Cut in the shortening in a food processor. Stir in the buttermilk. Mix just until moist, drop by spoonfuls over the peaches. Bake until toop is golden brown and fruit is soft and bubbling... 30 minutes. Printed
