Peach Cobbler

  • 10 peaches, about 3 lbs.
  • 1 C plus 1 Tbl. sugar
  • 1 Tbl. lemon juice
  • 1/4 tsp. nutmeg
  • 1-1/4 C + 3 Tbl. flour
  • 3/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/3 C vegetable shortening
  • 2/3 C skim buttermilk



Step 1

Heat oven to 375. Spray a 2 qt. baking dish with PAM. Peel peaches and slice. Toss
peaches with 1 C of the sugar, lemon juice, nutmeg and 3 Tbl. flour. Put in baking dish.
Combine remaining 1-1/4 C flour, 1 Tbl. sugar, baking powder, soda and salt. Cut in the
shortening in a food processor. Stir in the buttermilk. Mix just until moist, drop by
spoonfuls over the peaches. Bake until toop is golden brown and fruit is soft and
bubbling... 30 minutes.
