Cheryl's Zucchini Bread

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cup sugar
  • 2 tsp vanilla
  • 2 cups shredded, unpeeled zucchini
  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3/4 tsp nutmeg
  • 1/2 tsp baking powder

Preparation

Step 1

Beat eggs, oil and vanilla until thick. Stir in remaining ingredients and mix well. (I use my mixer on low for this).

Pour into 2 greased and floured 9x5 loaf pans. Bake at 325° for 1 hour and 10 minutes or until toothpick inserted in the center comes out clean.

Note: If you like to make small loaves, this recipe will yield 4 small loaf pans using 1 1/3 cup batter per pan. Bake about 50 minutes or less.
