Ingredients
- 12 oz. boneless, skinless chicken breasts, cut into 1/2" strips
- 2 t. curry powder, divided
- 2 T. olive oil, divided
- 1/2 C. onion, chopped
- 1 (16 oz) reduced sodium chicken broth
- 1 1/2 C. broccoli flowerets
- 1/2 C. chopped red bell pepper
- 1/3 C. raisins
- 2 t. brown sugar, firmly packed
- 1 C. Near East Original Plain Couscous
Preparation
Step 1
Sprinkle one side of chicken strips with 1 t. curry powder.
Heat 1 T. olive oil in large heavy skillet over medium high heat. Add chicken; saute 2 mins. on each side, or until golden and no longer pink inside. Remove from skillet, and keep warm.
Heat rest of oil in same skillet. Add onion; saute 2 mins., stirring frequently. Add chicken broth, broccoli, red bell pepper, raisins, brown sugar, remaining 1 t. curry powder, and reserved chicken to skillet; bring to a boil. Stir in couscous; cover, Remove from heat; let stand 5 mins. Toss couscous lightly with a fork before serving.
