Ingredients
- 4 c chicken broth
- 1/4 t dried Italian seasoning, crushed
- 1/4 t ground black pepper
- 1 10-oz pkg frozen mixed vegetables (2 c)
- 1 c quick cooking brown rice
- 2 c chopped cooked turkey or chicken
- 1 14.5 oz can dived tomatoes, drained
- 2 T basil pesto
Preparation
Step 1
In a large saucepan combine broth, seasoning and pepper. Bring to boiling. Stir in mixed vegetables and rice. Return to boiling; reduce heat. Simmer, covered for 8-10 mins or until vegetables are tender. Stir in turkey, tomatoes and pesto; heat through.
