Ingredients

    lb ground beef

    small onion, chopped

  • 1

    jar - 16 oz. salsa

  • 1/3

    c water

  • 1

    pkg taco seasoning mix

  • 1

    c frozen corn kernels

  • 1

    can sliced olives, drained

  • Crust

  • 1

    c yellow corn meal

  • 1

    can evaporated milk

  • 1

    can diced green chiles

  • 1

    c cheese

  • 1

    tap salt

Directions

Filling: Cook beef and onion, drain. Stir in salsa, water and seasoning, bring to a boil. Reduce heat to low cook. Add corn and olives Preheat 425 degrees. Combine cornmeal, evaporated milk, chiles, 1/2 c cheese and salt in medium sauce pan. Cook over med-high heat, until thickened. Spoon filling into 12 x 8 ungreased baking dish. Spread cornmeal mixture on top. Bake for 25 minutes. Sprinkle with remaining cheese.
