Low Carb Quiche Lorraine

Ingredients

  • 1 cup bacon
  • 1/2 cup chopped leaks
  • 1/2 cup chopped onions
  • Salt and pepper to taste
  • 3 eggs
  • 2 egg yolks
  • 1 cup heavy cream
  • 3/4 cup milk
  • 1 tsp. fresh thyme
  • 6 oz shredded Gruyere cheese

Preparation

Step 1

Preheat oven to 325.

Cook meat and set aside.

Cook veggies and salt and pepper in olive oil or bacon grease and set aside.

Whisk eggs, yolks, cream and milk together and add thyme.

Layer 1/3 meat, 1/3 veggies, 1/3 cheese, ½ egg mixture. Repeat. Top with last layer of meat, veggies and cheese.

Cook for 40-45 minutes until brown and no longer jiggly. Don’t overcook.
