Salsa, Bean and Cheese Pizza

Ingredients

  • 4 6-in store-bought or homemade toastadas
  • 3 T olive oil
  • 1 med onion, chopped (1/2 c)
  • 1/2 fresh jalapeno pepper, seeded and finely chopped
  • 1 clove garlic, minced
  • 1 c rinsed and drained canned black beans
  • 1 c chopped, seeded tomato
  • 4 oz Monterey Jack, cheddar or mozzarella cheese, shredded (1`cup)
  • 2 T chopped fresh cilantro

Preparation

Step 1

In a large skillet cook onion, jalapeno and garlic in 3 t olive oil over med-high heat until onion is tender. Stir in black beans and tomato; heat through.

Sprinkle tostadas with half of the cheese. Spoon bean mixture over cheese. Sprinkle with remaining cheese. Bake about 4 mins or until cheese melts. Sprinkle with cilantro.
