Fingerling potato salad

Ingredients
- 2 pds fingerling potatoes cooked just till tender and sliced in half lengthwise
- 1/2 red onion chopped
- 1 clove garlic smashed
- 1 T capers rinsed and chopped
- 1/2 c extra virgin olive oil
- 1 large stalk celery chopped
- chopped fresh parsley
- 1/4 t crushed red pepper flakes
- zest and juice of one lemon

Preparation
Step 1
drain potatoes and add to large bowl
heat evoo and add onions, capers and garlic to oil-simmer about 5-10 mins
remove from heat
add chopped celery, parsley, and red pepper to still warm potatoes
add lemon zest and juice
toss all with warm dressing and serve warm or room temp
