Crabcakes ala Leffler

  • 8 oz lump crabmeat
  • 1 egg, beaten
  • 2 tbs mayo
  • 1/2 tsp Old Bay seasoning
  • 1/8 tsp cayenne pepper
  • 1/2 tsp dijon mustard
  • 1/3 cup crushed saltines
  • 1 tsp chopped parsley



Step 1

Mix all ingredients except crab until well blended. Gently blend in crab, then mix into a 1/4 measuring cup to form cakes.

Place in refrigerator for 1 hour, then remove 15 minutes before frying.

Pan fry 4-5 minutes on medium-high heat per side, or until golden brown.
