Quinoa with Grilled Vegetables

Ingredients

  • 3 cups filtered water
  • 1 cup quinoa
  • 1 bunch asparagus
  • 1 yellow squash, cut into thick slices
  • 1 small sweet onion, cut into thick slices
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Sea salt and black pepper to taste
  • 1 can “no salt added” garbanzo beans, drained
  • 1 tablespoon fresh basil

Preparation

Step 1

1. Bring water to a boil.
2. In the meantime, place quinoa in a fine mesh strainer and rinse with cold water.
3. Add quinoa to boiling water. Reduce heat to a light boil and simmer 15-20 minutes.
4. While quinoa is cooking, place asparagus, squash and onion in a bowl.
5. Add oil, oregano, basil, salt and pepper and mix to coat evenly.
6. Grill vegetables until desired tenderness.
7. Combine cooked quinoa, grilled vegetables, garbanzo beans and fresh basil in a large bowl
