Light Mexican Casserole

Ingredients

  • 1 lb lean ground beef
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 Tbsp. flour & chili powder
  • 1 tsp. garlic powder
  • 1/2 tsp. cumin & coriander
  • 1/4 tsp. salt
  • 3/4 cup water
  • 16 oz. refried beans
  • 1/2 cup salsa
  • Whole wheat tortillas
  • Frozen or canned corn
  • 3/4 cup shredded cheddar cheese

Preparation

Step 1

Cook beef with onion and green pepper. Drain. Stir in spices and water. Simmer for 5 minutes.
Combine refried beans and salsa.
Place 2 whole wheat tortillas in a greased 2 1/2 qt. dish. Layer with half the beef, bean and 1 cup corn; repeat layers. Top with shredded cheese.
Bake at 350F for 25-30 minutes.
