GREEN SALAD WITH NUTS & SEEDS

Ingredients

  • Salad:
  • 2 hearts of romaine (9 oz. total), torn into bite-size pieces, about 4 cups
  • 1 1/2 oz. feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup walnut halves, toasted and roughly chopped
  • 1/4 cup unsalted, dry-roasted sunflower seeds
  • 1/4 cup pine nuts, toasted
  • Dressing:
  • 2 Tbsp. lemon juice
  • 1 Tbsp. balsamic vinegar
  • 1 tsp. prepared mustard
  • 1/2 tsp. salt
  • 2 Tbsp. olive oil
  • 1 Tbsp. orange juice
  • 1/8 tsp. freshly ground black pepper

Preparation

Step 1

1. Prepare dressing. Combine lemon juice, vinegar, mustard and salt in a jar. Cover and shake to dissolve the mustard and salt. Add oil, orange juice and pepper. Cover and shake well.
2. Make salad: combine all salad ingredientsw in a large bowl. Pour dressing over salad and toss gently.
