Southwestern Steak Chili

Ingredients

  • 1 c frozen whole kernel corn, thawed
  • 1 to 1 1/2 t chili powder
  • 1 T oil
  • 1 17-oz pkg refrigerated cooked beef sirloin tips
  • 1 16-oz jar mild or med thick and chunky salsa
  • 1 14 to 16-oz can pinto or red beans, rinsed and drained
  • 1/4 c hickory flavor BBQ sauce
  • 1/4 c sour cream

Preparation

Step 1

In a large saucepan cook corn and chili powder in hot oil over med heat for 3 mins, stirring frequently. Stir in beef tips with gravy, salsa, beans and BBQ sauce. Bring to boiling, stirring occasionally to break up beef slightly. Reduce heat. Simmer, covered, for 5 mins. Top each serving with a tablespoon of sour cream.
